Slow roasted pork with citrus and garlic

My most frequent cooking mishap is that I don’t read the instruction thoroughly when I’m doing the meal plan. 

First, I didn’t realize that this has to be marinated 8 hours or longer. The dang recipe said total time 2 hours and 30 minutes. I picked a day that I can leave work at 5 so dinner would be ready before 8. Hmmm. Well….we just had to make something different that day. That night I made the marinade. Tomorrow, I’ll get to eat you, I thought. 

Of course, the pork needs to come to room temp before going to the oven…which might take at least an hour. GRRRRR. And my husband read the instruction and informed me that the roasting will take between 4.5-5 hours. Obviously I didn’t bother to read the instruction after the first incident. Good thing the pork can sit in the marinade up to 2 days. 

Finally on day 3, we got to eat it. It was so good. Our pork was only 3.5 lbs vs 6-8 lbs the recipe calls for. We probably made too much marinade and the fact that it was marinating for 2 days made the flavor sooo intense. With light salad, it was perfect. 

I don’t think this will be the last time….I just never learn.
